1 cup quinoa, rinsed

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup crumbled feta cheese

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Salt and pepper, to taste

Optional: Pinch of red pepper flakes for heat

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Sauté the Vegetables: While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Add the Spinach: Stir in the chopped spinach and cook until wilted, about 3 minutes. If using red pepper flakes, add them now for a bit of heat.

        Combine Ingredients: In a large bowl, combine the cooked quinoa, sautéed spinach and onion mixture, cherry tomatoes, and crumbled feta cheese. Drizzle with lemon juice and season with salt and pepper. Toss gently to combine all ingredients well.

          Garnish and Serve: Mix in the chopped parsley for freshness. Serve warm or at room temperature. This dish can be stored in the refrigerator for up to 3 days, making it perfect for meal prep!
