Tofu with Vegetables

Ingredients
  

1 block of firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 medium carrot, thinly sliced

1 cup snap peas

3 cloves garlic, minced

1-inch piece of ginger, grated

2 green onions, chopped

1 tablespoon cornstarch (optional, for crispy tofu)

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

Begin by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 20 minutes. Once pressed, cut the tofu into small cubes.

    If you prefer crispy tofu, toss the cubes in cornstarch and set aside.

      Heat a large skillet or wok over medium-high heat. Add the olive oil and once hot, add the tofu cubes. Let them fry for about 5-7 minutes until they become golden and crispy, turning occasionally for even color. Remove the tofu and set aside.

        In the same skillet, add sesame oil. Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

          Add the sliced bell pepper, broccoli florets, carrot, and snap peas to the pan. Stir-fry the vegetables for about 5-6 minutes until they're vibrant and just tender but still crisp.

            Return the cooked tofu to the pan. Pour in the soy sauce and toss everything to combine, ensuring the tofu and vegetables are evenly coated. Season with salt and pepper to taste.

              Finally, sprinkle chopped green onions and sesame seeds over the mixture. Give it a final stir and remove from heat.

                Serve hot over steamed rice or noodles for a complete meal.
