12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 bell pepper (red or yellow), diced

1/4 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp garlic powder

Salt and pepper to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Usually, this takes about 3-5 minutes. Drain and rinse under cold water to stop the cooking process.

    Prepare the Vegetables: While the tortellini is cooking, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Place all the chopped vegetables into a large mixing bowl.

      Combine the Ingredients: Add the cooled tortellini to the bowl of vegetables. Add sliced black olives and crumbled feta cheese to the mix.

        Make the Dressing: In a separate small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and pepper. Adjust seasoning to taste.
