Ingredients

1 pound ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, finely chopped (optional)

2 ripe avocados

4 large eggs

Olive oil for cooking

Fresh lime juice (for avocado)

Salt and pepper to taste (for avocado)

Fresh cilantro (for garnish, optional)

Instructions

Prepare the Turkey Patties:

    - In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, and chopped parsley. Mix until well combined.

      - Form the mixture into 8 equal-sized patties.

        Cook the Turkey Patties:

          - Heat a large skillet over medium heat and add a drizzle of olive oil.

            - Place the patties in the skillet, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Transfer the cooked patties to a plate and keep warm.

              Prepare the Avocado:

                - While the patties are cooking, slice the avocados in half, remove the pit, and scoop the flesh into a bowl. Add a squeeze of lime juice, and season with salt and pepper. Mash lightly with a fork until creamy but still chunky.

                  Cook the Eggs:

                    - In the same skillet (add more olive oil if necessary), crack the eggs into the pan, being careful not to break the yolks. Cook to your desired doneness: sunny-side up, over-easy, or scrambled.

                      Assemble the Breakfast:

                        - On each plate, serve a turkey patty as the base. Top with a generous scoop of avocado mash and place an egg on top of each patty. Garnish with fresh cilantro, if desired.

                          Serve:

                            - Enjoy your Turkey Breakfast Patties with Avocado and Egg immediately, paired with fresh fruits or whole-grain toast for a complete meal.
