Tuscan Chicken Pasta Recipe

8 oz (225g) pasta (fettuccine or penne)

2 chicken breasts, boneless and skinless

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup spinach leaves, fresh

1 cup parmesan cheese, grated

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet over medium heat, heat the olive oil. Add the chicken and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest before slicing.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat to medium-low. Add minced garlic and sauté for about 1 minute until fragrant. Add the sun-dried tomatoes and stir for another minute.

        Make the Sauce: Pour in the heavy cream, stirring constantly to combine with the tomato mixture. Allow it to simmer for a few minutes until slightly thickened. If the sauce is too thick, gradually add reserved pasta water to reach your desired consistency.

          Combine Ingredients: Stir in the fresh spinach and allow it to wilt. Add the sliced chicken and cooked pasta, mixing everything together. Finally, stir in the grated parmesan cheese until melted and everything is well combined.

            Serve: Adjust salt and pepper to taste. Garnish with fresh basil leaves and extra parmesan if desired, then serve hot.
