4 medium sweet potatoes

1 cup shredded cooked chicken (preferably rotisserie)

1 cup BBQ sauce (your favorite variety)

1/2 cup shredded sharp cheddar cheese

1/4 cup cream cheese, softened

1/4 cup Greek yogurt or sour cream

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced for garnish

Fresh cilantro, chopped for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and scrub the sweet potatoes to remove any dirt. Pat them dry with a towel, then pierce each sweet potato several times with a fork. This will help steam them while baking.

      Bake Sweet Potatoes: Place the sweet potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for about 45-60 minutes or until tender when pierced with a fork.

        Prepare the Filling: While the sweet potatoes are baking, combine the shredded chicken, BBQ sauce, cream cheese, Greek yogurt, and spices (garlic powder, onion powder, smoked paprika) in a mixing bowl. Stir until everything is well combined and set aside.

          Cool and Scoop: Once the sweet potatoes are done baking, remove them from the oven and let them cool for about 10 minutes. Carefully slice each sweet potato in half lengthwise and scoop out some of the flesh, leaving a small border (about 1/4 inch) all around.

            Mix in Sweet Potato: Add the scooped sweet potato flesh to the chicken mixture. Mix well until the sweet potato is combined fully with the chicken and BBQ sauce. Adjust seasoning with salt and pepper if necessary.

              Stuff the Sweet Potatoes: Spoon the BBQ chicken mixture back into each sweet potato half. Top each stuffed potato with shredded sharp cheddar cheese.

                Second Bake: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
