Ingredients

2 lbs ground beef

1 cup mashed potatoes (prepared from 2 large potatoes)

1 cup cheddar cheese, shredded

1/2 cup crispy bacon, crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup milk

1/4 cup fresh parsley, chopped (optional)

1 cup breadcrumbs

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup ketchup (for glaze)

1 tablespoon brown sugar (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Mashed Potatoes: If not using leftover mashed potatoes, peel and chop the potatoes, boil them until tender, then mash them. Allow to cool slightly before adding to the meat mixture.

Mix the Ingredients: In a large mixing bowl, combine the ground beef, mashed potatoes, cheddar cheese, crispy bacon, chopped onion, minced garlic, milk, parsley, breadcrumbs, eggs, Worcestershire sauce, salt, pepper, and smoked paprika. Use your hands or a spoon to mix until just combined; be careful not to overmix.

Shape the Meatloaf: Transfer the mixture to a parchment-lined loaf pan or shape it into a free-form loaf on a baking sheet. Smooth the top with a spatula.

Prepare the Glaze: In a small bowl, mix together the ketchup and brown sugar. Spread this mixture evenly over the top of the meatloaf.

Bake: Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest and Slice: Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Serve: Slice and serve with additional mashed potatoes and your choice of veggies. Enjoy your hearty and flavorful Loaded Potato Meatloaf!
