Vanilla Crepes

Ingredients
  

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

2 tablespoons melted butter (plus more for cooking)

A pinch of salt

Optional toppings: fresh fruit, whipped cream, chocolate sauce, or maple syrup

Instructions
 

In a mixing bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, melted butter, and salt until smooth. You can use a blender for a very smooth batter. Scrape down the sides to ensure all ingredients are well combined.

    Let the batter rest for at least 30 minutes at room temperature. This allows the bubbles to settle and results in thinner, smoother crepes.

      Heat a non-stick skillet or crepe pan over medium heat. Lightly grease it with a small amount of butter.

        Pour about 1/4 cup of the batter into the center of the pan, swirling the pan to spread the batter evenly into a thin layer.

          Cook for about 1-2 minutes, or until the edges begin to brown and the surface appears set. Carefully lift the crepe with a spatula and flip it over to cook the other side for another minute.

            Transfer the cooked crepe to a plate and cover it with a clean kitchen towel to keep warm. Repeat the process with the remaining batter, greasing the pan as needed.
