1 cup all-purpose flour

1 tablespoon sugar (brown or coconut for extra flavor)

2 tablespoons baking powder

½ teaspoon salt

1 cup almond milk (or any plant-based milk of choice)

2 tablespoons vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Optional toppings: fresh fruits, maple syrup, or nut butter

Instructions
 

In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.

    In a separate bowl, combine the almond milk, vegetable oil, and vanilla extract. Whisk until well mixed.

      Create a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently until just combined; the batter will be slightly lumpy. Avoid overmixing for fluffier pancakes.

        Preheat a non-stick skillet or griddle over medium heat. If using, lightly grease with a bit of oil.

          For each pancake, pour about ¼ cup of batter onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set.

            Flip the pancake and cook for an additional 2-3 minutes until golden brown.

              Repeat with the remaining batter, adding more oil to the skillet as needed.

                Serve warm with your desired toppings such as fresh fruit, syrup, or nut butter.
