Whipped Feta Bruschetta

8 oz (225g) feta cheese, crumbled

1/2 cup (120ml) Greek yogurt

2 tablespoons olive oil, plus extra for drizzling

1 teaspoon lemon juice

1 clove garlic, minced

1/2 teaspoon fresh oregano, chopped (or 1/4 teaspoon dried oregano)

1 small pint of cherry tomatoes, halved

1 tablespoon balsamic glaze

Salt and pepper, to taste

1 baguette or crusty bread, sliced into 1/2-inch pieces

Fresh basil leaves, for garnish

Prepare the Whipped Feta: In a food processor, combine crumbled feta cheese, Greek yogurt, olive oil, lemon juice, minced garlic, and fresh oregano. Blend until the mixture is smooth and creamy. Taste and season with salt and pepper as desired.

    Roast the Bread: Preheat your oven to 400°F (200°C). Arrange the sliced baguette pieces on a baking sheet and drizzle them lightly with olive oil. Bake for 8-10 minutes or until they are golden brown and crispy.

      Tomato Mixture: In a mixing bowl, combine the halved cherry tomatoes with a drizzle of olive oil, balsamic glaze, and a pinch of salt and pepper. Toss well to coat the tomatoes.

        Assemble the Bruschetta: Once the bread is toasted, remove it from the oven and let it cool slightly. Spread a generous dollop of whipped feta on each piece of bread. Top with a spoonful of the marinated cherry tomatoes.
