White Cheddar and Spinach Chicken Burgers

1 lb ground chicken

1 cup fresh spinach, chopped

1/2 cup white cheddar cheese, shredded

1/4 cup breadcrumbs (use gluten-free if desired)

1 garlic clove, minced

1 small onion, finely chopped

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 tablespoon olive oil (for cooking)

4 whole wheat burger buns

Lettuce leaves and tomato slices (for serving)

Optional: Sriracha mayo or your favorite sauce

Instructions
 

In a large mixing bowl, combine the ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, minced garlic, chopped onion, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Divide the mixture into four equal portions and shape each portion into a burger patty, about 1/2 inch thick.

      Heat a skillet over medium heat and add the olive oil. Once hot, add the chicken patties to the skillet.

        Cook the patties for about 5-6 minutes on each side or until they are cooked through and have a nice golden crust. Ensure the internal temperature reaches 165°F (75°C).

          While the patties are cooking, you can toast the burger buns in the same skillet for 1-2 minutes until they're golden brown.

            Assemble your burgers by placing a toasted bun on the bottom, followed by a lettuce leaf, a chicken patty, and a slice of tomato. Add any sauces like Sriracha mayo, if desired, then top with the other half of the bun.

              Serve immediately with your favorite side—be it sweet potato fries, a salad, or chips.
