White Cheddar and Spinach Chicken Burgers

Ingredients
  

1 lb ground chicken

1 cup fresh spinach, chopped

1/2 cup white cheddar cheese, shredded

1/4 cup breadcrumbs

2 cloves garlic, minced

1/2 small onion, finely diced

1 large egg

1 tsp Dijon mustard

1 tsp smoked paprika

Salt and pepper, to taste

Olive oil, for grilling

Burger buns

Toppings: lettuce, tomato slices, and avocado

Instructions
 

In a large mixing bowl, combine the ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, minced garlic, diced onion, egg, Dijon mustard, smoked paprika, salt, and pepper. Mix until well combined but do not overmix to keep the burgers light.

    Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick.

      Preheat a grill or skillet over medium heat and lightly brush with olive oil to prevent sticking.

        Cook the patties for about 6-7 minutes on one side until nicely browned. Flip and cook for another 5-6 minutes on the other side, or until the internal temperature reaches 165°F (74°C).

          During the last minute of cooking, place the burger buns on the grill to toast lightly and add a slice of white cheddar cheese on each patty to melt.

            Remove from the grill and assemble your burgers on the toasted buns, adding lettuce, tomato, and avocado as desired.
